At Pastoral Lane, food doesn’t start in a factory or a supermarket aisle—it starts in the paddock. Farming near Albury, we’re proud to offer honest products that lend themselves to endless, delicious meals made with care and creativity.

Our range is simple, but the possibilities are anything but. Lamb sausages perfect for quick family dinners, tender loin chops that shine with minimal seasoning, golden honey harvested from our hives, fresh eggs collected daily, and slow-cooked lamb shanks that reward patience with rich, comforting flavour. These are the kinds of ingredients that inspire you to slow down, cook from scratch, and truly enjoy your food.

One of our favourite ways to bring several of these products together is a meal that feels special but is surprisingly simple—a Honey-Glazed Lamb Loin Chops with Farm Eggs and Crispy Potatoes, finished with a nod to comfort cooking inspired by our slow-roasted shanks.

Honey-Glazed Lamb Loin Chops with Crispy Potatoes & Farm Eggs

(Serves 4)

Ingredients

Lamb

8 lamb loin chops (about 1 kg)
2 tablespoons olive oil
2 tablespoons Pastoral Lane honey
2 cloves garlic, crushed
1 tablespoon fresh rosemary, finely chopped
 (or 1 teaspoon dried)
1 teaspoon sea salt
½ teaspoon cracked black pepper

Potatoes

1 kg potatoes, cut into chunks
2 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon cracked black pepper

Eggs
4–6 Pastoral Lane eggs

Method

  1. Preheat the oven
     Preheat oven to 200°C (fan-forced) or 220°C (conventional).
  2. Roast the potatoes
     Parboil potatoes in salted water for 8–10 minutes until just tender. Drain well, rough them slightly by shaking in the pot, then transfer to a roasting tray.
     Drizzle with olive oil, season with salt and pepper, and roast for 35–40 minutes, turning once, until golden and crispy.
  3. Prepare the lamb
     In a small bowl, mix olive oil, honey, garlic, rosemary, salt, and pepper. Rub this mixture generously over the lamb loin chops.
  4. Cook the lamb
     Heat a heavy-based frying pan or grill plate over medium–high heat. Cook chops for:
    1. 3–4 minutes per side for medium
    2. 2–3 minutes per side for medium-rare
       Allow the honey to caramelise gently without burning.
  5. Rest the lamb
     Remove chops from the pan and rest loosely covered for 5 minutes.
  6. Cook the eggs
     While the lamb rests, fry or poach eggs to your liking. Soft yolks pair beautifully with the honeyed lamb and crispy potatoes.
  7. Serve
    Plate the lamb chops alongside the potatoes, top with eggs, and drizzle over any pan juices.
